Antioxidants from fruits and berries overview

Some studies have evaluated the phenolic contents in fruits at more than one ripening stage. In the case of plums as well as with red grapes intended for wine making, a marked increase in the content of phenolics of potential antioxidant potency was seen in the fully ripe stage in comparison with the less ripe stage.2,3 In contrast, no clear differences were observed in other fruits, e.g. peaches and

Enzyme Activities of Non Saccharomyces Wine Yeasts

With respect to the role played by these non-Saccharomyces species in wine quality, they are known to have the capability to improve the wine aroma (Charoenchai et al. 1997 Esteve-Zarzoso et al. 1998). The available aromas in the grape impart and define the characteristics and the final quality of wine. Terpenic compounds account for most of these aromas. Grape processing liberates small quantities of aromatic terpenols however, odorless precursors in the grape present a large, untapped reserve for wine aromas. Not only is the aroma an important quality factor in wine but also the intensity of the color is another very important quality factor in red wine, where anthocyanins are the main pigments. Various enzyme activities can improve the process of winemaking and enhance wine quality. The yeasts involved in wine making could be important producers of these enzymes (for a review see Table 1).

Wine and Juice Production

Even though the amount of -glucans in grapes and fruits is significantly lower than in cereals, cellulases have also found applications in the production of wines and fruit juices where they are used in combination with pectinases and hemicellulases. In wine making, the enzymes are generally used for better skin maceration, improved color extraction, easier must clarification and filtration, and increased wine quality and stability (85). The use of -glucosidases for aroma development from naturally present glucosylated precursors has also been described (86). Macerating enzyme cocktails with cellulases are also used in fruit juice production. In addition, the use of these enzymes offers advantages in the treatment of by products of the fruit industry by improving the extraction yield and the overall process efficiency. Cellulases and hemicel-lulases can be used for the isolation of pectin from citrus fruits to break down the cell walls, increasing the pectin yield. Cellulases can be...

Utilityutilization Of Enzymes In Foods

Brewing, distilling, wine making, and the baking of bread all require freshly grown, specially developed yeast strains (S. cerevisiae) to inoculate each fermentation. The activity of fiF and of -glucosidase determines the physical and organoleptic properties of bread. The capacity of a given strain for sugar uptake and the further conversion of the sugars present in bread dough are of primary importance for its bread-making suitability (31).

Use Of Glycosidases For Aroma Enrichment

Muscat cultivars were often used as a model to test the effect of the enzyme treatment because of the abundance of monoterpenyl glycosides. The hydrolysis of these glycosides liberates highly odorous alcohols which can be detected by sensory analysis and easily analyzed by GC MS. In general, the addition of enzyme preparations possessing glycosidase activities during wine making results in a significant increase in the concentration of monoterpenes, C13-norisopre-noids, and shikimate derived compounds.

Potential Adverse Effects Of Enzyme Preparations

A phenolic off-flavor is perceived in fermented products (beer, cider, wine) when aforementioned volatile phenols are present at high levels (171-173, 181, 184). The wines made from grape juice, that was initially spiked with some pectinase preparations rich in glyco-sidase activities contained exceedingly high levels ( 770 ppb) of vinylphenols, masking the pleasant fruity and floral odors which were generated by hydrolysis of glycosidic flavor precursors (109, 171, 172). It was demonstrated recently that the high concentration of volatile phenols detected sometimes in wines was due to the consecutive action of cinnamate esterase activity from enzyme preparation and decarboxylase activity from yeast (S. derevisiae) (171-173) present in the majority of enological strains (175). Consequently, particular attention is now being directed to develop an enzyme preparation without cinnamate esterase activity and to select yeast strains with low activity toward hydroxycinnamic acids (185)....

Methods for Yeast Characterization

Methods by which strains of the same species can be differentiated have been shown to be very important for yeast strain characterization. In winemaking, several studies have analyzed the diverse microflora of grapes and musts and several interesting methods have been developed (Figure 2).
